Haandi Biryani Recipe In Urdu by chef Madhur

Ingredients:

Chawal:======================11/2cup(bhigo len)
Matar(peas):================1/2 cup
Dahi(yogurt):===============3/4 cup
phool gobi (medium size):===1/4 adad (kaat len)
Gajar(carrot) medium size:==1 (1/2 inch k cubes kaat len)
Tomato (medium size):=======2 (chopped)
Long:=======================2-3
Piyaaz(medium size):========4
Hari mirch:=================4-5 (chopped)
Bari Alaichi:================1
Sabz Alaichi:===============2-3
French Beans:===============10-15
Daar cheeni:================ 1 inch ka tukra
tezz Paat:==================1
Dhaniya powder:=============1 tbs
ghee, ya oil:===============2-4 tbs
podeena, sabz dhaniya:======2,2 tbs (chopped)
gram masala, zeera:=========1/2, 1/2 tsp
lehsan adrak paste:=========1/2, 1/2 tsp
surkh mirch,haldi powder:===1,1 tsp
zaafran:====================thora sa
kewraa:=====================chand drops
namak:======================as per choice

Recipe:

1: 1 piyaaz ko chop kr len jab k baki 3 k slices kaat len.
2: Zaafraan ko kewray man bhigo den.
3: 1 pan man 4 cup paani, namak, sabz ilaichi, bari ilaichi, long, daar cheeni,tez paat or chawal daal kr ubaalen. 1 kani reh jaey to utaar kr pani nithar len.
4: dusry pan man gajar, matar, gobhi or french beans 3 cup pani man dal kr ubalen. 3/4 gal jaen to utaar kr paani nika len or taaza pani daal kr rakh den.
5: 1 karahi man 2 tbs cooking oil dal kr piyaz k slices fry kr len.
golden brown ho jaen to nikal kr kitchen paper pr rakh den.
6: 1 gehray penday waaly bartan man baqia cooking oil gram kr k zeera bhooney.
7: is man chopped piyaaz daal kr halki aanch pr golden brown hony tak fry kren.
8: ab adrak lehsan paste or hari mirch shamil kren.
9: dhaniya powder, haldi, pisi hui surkh mirch or dahi mila kr achi trha mix kren.
10: phir tamater shamil kr k itna pkaeyn k ghee oper ajaey... ab ubli hui sabzian or namak daal kr mix kren.
11: 1 haandi man sabzi ke teh laga kr ooper chawal daalen..... is k oper thory thory zaafraan mily kewray, gram masaly, dhaniay k pattay, podeeny, fried piyaaz or ghee ke teh lgaen.
12: isi trha tmam chawal or masla jaat khatam hony tak teh lgaeyn...... sab se oper masala jaat ke teh honi chahey.
13: Atta ya aluminium foil lga kr dhakkan achi trha band kren.
14: taway pr choolha rakh kr us per haandi rakhen or 20 minute tak pakny den.
15: Raaitay or salad k sath serve kren.
